Corned Beef From Scratch

1 5-6-pound beef brisket

¼ tsp Salt-Peter (potasssium nitrate)

¼ C warm water 

2 T sugar

2 cloves garlic, minced

2 tsp paprika

1 T mixed pickling spices

¾ C salt

2 Q water


Put the meat in a large container big enough to hold the meat, spices and water

Dissolve salt-peter in warm water

Add next 4 ingredients

Dissolve the salt in the two quarts of water

Mix all together, cover, and put in refrigerator for 3 weeks.

The hardest ingredient to find is the salt-peter. I bought mine in a drug store over 40 years ago, and still have the same bottle. I've been told the pharmacy at King Soopers can get it for you. It's used in medications for animals. If all else fails, you can find it at: . There are other sources that sell in quantities much too large for the needs of this recipe.
